It's an egg white omelette with sautéed mushrooms and spinach, zucchini and potato hash browns, bacon, and fruit. It is a large meal for the number of calories, under 350cal.
Omelette: 3/4cup/6oz/90g of egg whites, 2 med mushrooms/1.5oz/85g of sliced mushrooms, 1 green onion sliced, 1cup of baby spinach. saute green onion and mushroom (salt/pepper to taste) on med high until almost done. Then add the spinach and cook until wilted. Put that aside and start on the omelette. Over med-low heat pour in egg whites and cook until most of the liquid has set. Then add the spinach and mushrooms and fold. Cook until 2-3min per side.
Zucchini-potato hash browns: Grate equal parts potato and zucchini totaling 3/4cup/160g. Squeeze as much water as you can from them. Place in a pan over med-high heat, salt and pepper to taste. I use 0 cal cooking spray but you could use 1tbls olive oil. Cook until bottom has browned then flip and cook until brown.
Bacon: I like Pacific Coast Applewood Smoked Bacon, 1 slice.
Fruit: Your choice, I like strawberries 1cup.
