Gluten free cornbread muffins

I just added my dad's Texan cornbread recipe to the recipe database (though I don't see it showing up yet). I have modified his original recipe to be gluten free! If you want the gluten version, just use regular flour instead of the gluten free flour mix :)
Just wanted to share it with you here so those who are interested will know about it!

Bob's Red Mill Corn Meal ( 1 and 1/2 cups )
Bob's Red Mill Gluten Free Flour Mix ( 1/2 cup )
Baking Powder ( 3 and 1/2 tsp )
Sea Salt ( 1 tsp )
Honey ( 1/4 cup )
1 % Low Fat Milk ( 3/4 cup )
Canola Oil ( 1/4 cup )
Large Egg ( 1 egg )

Preheat oven to 375 degrees F
Mix dry ingredients
Mix milk and egg into dry ingredients
Add oil and honey
Mix all together (do not over mix!)
Oil muffin pan lightly
Spoon batter into muffin pan
Bake until golden brown ( about 20 - 22 minutes )

146 calories per muffin (recipe makes 12 muffins).
Carbs: 22g
Fat: 6g
Protein: 3g
Sodium: 343mg
Fiber: 3g
