Forgive me if this has already been mentioned, but I just made these today and they're delicious! I'm trying not to use artificial sweeteners as much and trying to do the whole low gi thing, so I sweetened these with agave nectar.
2c Whole Wheat Flour
1 tsp Baking Soda
1 tsp Baking powder
1/2 tsp Salt
1 tsp Cinnamon
1 tsp ground ginger
1/4 tsp nutmeg
1/2 c unsweetened apple sauce (I made my own by just pureeing apples with a little bit of water)
1/2 c agave nectar
1/2 c fat free milk
1/2 c water
1/2 c blueberries (mine were frozen so a bit smaller than regular ones)
Zest of 1 lemon
1 tsp vanilla extract
Mix the dry together, mix the wet together, mix those two together, stir in the blueberries, and you're done. Boom. It made 12 muffins in my tin. They don't rise too much, I ended up filling my tins up all the way and I didn't get any real muffin tops. I just sprayed my tin with a tiny bit of cooking spray to get them to release. They baked for about 19 minutes at 375, but my oven is a bit wonky so it might take shorter or longer in yours.
You can probably use whatever spices you like most and whatever fruits or mix ins you have on hand, but I probably wouldn't go over 3/4 cup of mix ins.
When I make this again, I think I'm going to tweak it a bit. I'm going to try to find white whole wheat flour (I've read that it's made of an albino strain of wheat that has a similar milling process to regular whole wheat flour) which supposedly has a lighter taste. I might also try it with pureed zucchini instead of apple (you could also use a mashed banana) and I might knock back the agave to 3/8 or 1/4 cup as they came out a bit sweet for my taste.
Oh, and they came out to 126 calories and 0 grams of fat! Yum yum! When I make them again, that will probably be lower with less agave.
