Gazpacho - Must Try :)

Hello MFPers,

Thought I would share a delish and healthy recipe for Gazpacho. Hope you enjoy it!
Gazpacho
3 tomatoes
1 red bell pepper
1 lemon, peeled and de-seeded (or not peeled)
2-3 stalks of celery - gives it a salty flavor
2 carrots (no more than two, or it gets too carrotty)
1 cucumber
1 -2 stalks of Kale (just to supercharge it)
1 handful of sun dried tomatoes (just plain, not in oil - this makes the tomato taste pop)
1/4 onion
if you have spinach lying around, throw in a handful it only adds to it
add some water (maybe 1 cup)
1 jalapeno pepper if you want a little fire

Blend it down, put it in the fridge, and in an hour, you have a great thirst quencher!
