HG's Burger on the Double!

Our take on the classic celeb favorite, the world-famous In-N-Out Double-Double Burger.



Ingredients:

2 Boca Meatless Burgers, Original (or other meat-like veggie patties*)

2 slices fat-free American cheese

1 Wonder Light Bun (or another light bun*)

1 large leaf romaine lettuce; split in half or shredded

1 slice onion

2 slices tomato

1 small dill pickle

2 tsp. ketchup

1 tbsp. fat-free mayonnaise



Directions:

Heat burger patties according to directions on the box (either in the microwave or stovetop with nonstick spray). Split bun in half. Combine ketchup and mayo into one sauce. Cut pickle into coin-shaped slices. Begin with the bottom half of the bun and layer ingredients like this: 1 patty; 1 slice cheese; sauce; second patty; second slice cheese; lettuce; tomato; onion; pickles. Finish off sandwich with the top of the bun. Now open wide; this one's a mouthful!

HG's Turkey Reuben Sandwich

Ingredients:

2 slices light (reduced calorie) rye bread (like the ones by Beefsteak and Oroweat)

4 slices thinly sliced lean deli turkey (such as the ones by Healthy Choice, Oscar Mayer and Butterball)

4 tbsp. well-drained sauerkraut

1 slice Galaxy Foods Veggie Slices, Swiss Flavor (or another low-cal, low-fat Swiss cheese product*)

4 tsp. fat-free Thousand Island dressing

20 sprays I Can't Believe It's Not Butter Spray

Directions:
Evenly spritz butter spray on 1 side of each slice of bread, using 10 sprays per slice. Spread non-buttered sides evenly with the dressing. Place one slice, buttered side down, in a small cold skillet sprayed with nonstick spray. On top of that slice place sauerkraut, cheese slice, turkey and finally the remaining slice of bread (buttered side facing up). Cook in skillet over medium-low heat and grill the sandwich slowly, pressing down on it a couple times with a spatula. Grill until the bread is browned and crisp; then flip the sandwich over. Grill other side until golden brown. Serve immediately.

Saucy Meatball Stuffed Pita

Ingredients:

1/2 pouch Boca Meatless Ground Burger (or 2 oz. of another cooked ground beef substitute*)

2 tbsp. Egg Beaters, Original

2 tbsp. minced onion

1/8 tsp. salt

1/4 tsp. garlic powder

1 tbsp. ketchup

1 Western Bagel Alternative Pita (or another low-calorie pita*)

1/4 cup canned fat-free tomato sauce

Optional: pepper, additional salt and garlic powder



Directions:

Begin by preheating oven to 400 degrees. Slice the pita across 2 inches from the top to create a pocket. Take this extra piece of pita, open it up, and cut into very tiny pieces. Place pita crumbs in a dish and cover with Egg Beaters; allow crumbs to soak up liquid for a few minutes. Defrost Boca crumbles (about 30 seconds in the microwave should do it; you don't want to heat them) and blot away any excess moisture with a paper towel. Next add onion, salt, garlic, ketchup and Boca crumbles to the egg/pita-crumb mixture. Thoroughly mix the ingredients. Set out a small baking pan lined with wax paper and/or sprayed generously with nonstick spray. Using your hands, form "meat" mixture tightly into 3 balls (it's okay if they appear liquid-y; they will solidify upon cooking). Place balls on the baking dish and cook in the oven for 15 minutes. Meanwhile, heat tomato sauce and (if desired) season to taste with salt, pepper, and garlic powder. Gently open pita pocket and toast to your preference (toasting it at least slightly will help keep it from getting soggy from all that hot sauciness!). When meatballs are ready, remove from oven and carefully coat them in the tomato sauce. Gently fill pita pocket with meatballs and sauce. Dig in!!


HG Alternative! Trouble tracking down ground beef substitute? Defrost a Boca Original Meatless Burger and chop it up, instead! Just add 10 calories, 10mg sodium, and a gram of fiber to the final stats (Points value stays the same).

HG Tip!
