Chicken Cordon Bleu Casserole

Chicken Cordon Bleu Casserole (actually got it from the Kroger website!) http://www.kroger.com/great_meals/recipes/Pages/eat_laugh_love.aspx

Recipe:

1 cup reduced fat sour cream
1 1/2 cups reduced sodium chicken broth
1 T. Dijon mustard
1/4 tsp. black pepper
1 1/2 cups instant brown rice
2 lb chicken breast, diced and cooked
8 oz diced ham
1 pkg (6 oz) sliced swiss cheese, cut in pieces

Optional ingredients: (I didn't use)
1 cup frozen peas
1 cup corn flakes, crushed
1/2 cup grated parmesan cheese
2 T. melted butter

Preheat oven to 400*. Whisk together sour cream, chicken broth, mustard, and black pepper in large bown until smooth. Add rice, chicken, ham, Swiss cheese, and frozen peas (if desired); stir to combine.

Pour mixture into a 9 x 13" baking dish and spread evenly.

Optional topping: Mix together crushed corn flaxes, Parmesan cheese, and melted butter in small bowl. Sprinkle evenly over top of the casserole.

Bake uncovered on center oven rack for 25 minutes until heated through and topping is golden brown.

226 calories/ 11g carb/ 8g fat/ 27g protein/ 1g fiber/ 432mg sodium

271 calories/ 13g carb/ 10g fat/ 32g protein/ 1g fiber/ 519mg sodium



I hope this turns out yummy! I assembled all of the ingredients and have it in the fridge so it will be easy to bake later. I think it would work well in the crock pot as well!

    That looks really good! I would add a little ground white pepper and a clove of garlic to the sauce mixture. :) Might try it this week if it gets colder out.

    Ok, this was a huge hit!! EVERYONE in my family loved it, even my picky 10 year old had a second helping!! It's a definitely make again meal. I served it w/ peas on the side instead of mixing the peas in like the recipe called for. I think it's a pretty versatile recipe to make different ways. Oh, and I did bake it a bit longer than called for and my hubby added extra cheese to his. :bigsmile:

    I made this last night and it was really good. I did use the corn flake topping but didn't add the peas. I also use Brummel and Brown instead of butter. I added all the ingredients to the recipe builder and it was 303 calories when entered as 8 servings. Next time I'll probably use less chicken. The whole family enjoyed it! Thanks for sharing.
