Sweet and Spicy Glazed Chicken
This is a recipe from "The Pampered Chef". I made it for my husband and we both absolutely loved it!
1/3 c (75mL) apricot jam
1 T (15 mL) lime juice
1 jalapeno pepper, seeded and finely chopped (I used pepper flakes since I didn't have a jalapeno)
1 t (5 mL) chili powder
1/2 t (2 mL) salt
4 boneless, skinless chicken breast halves (4-6 oz / 125-175 g each)
1 garlic clove, pressed (I used garlic powder)
1 T (15 mL) snipped, fresh cilantro (I used dried)
Place jam in a bowl and microwave on HIGH 30-40 seconds or until melted. Add lime juice and pepper. Whisk together well and set aside.
Combine chili powder with salt. Flatten out chicken to an even thickness using the flat side of a meat tenderizer. Rub the garlic over the chicken then sprinkle evenly with chili powder mixture.
Heat a 12 in. skillet over medium-high heat until hot. Lightly spray skillet with nonstick cooking spray. Add chicken to skillet, cooking 5-7 minutes per side or until chicken is no longer pink in center, brushing chicken with glaze while cooking. Sprinkle with cilantro and serve.

It was "kinda" spicy for me and I'm a person who eats jalapenos from the jar ... So she might not like it.0 -
