Tangy Coconut Black Bean Soup
Nutritional Content (Makes 6 servings)
Serving Size: 1 cup Calories: 68 Total Fat: 2 gm Sodium: 83 mg Carbohydrates: 11 gm Dietary fiber: 3 gm Protein: 3 gm

Minimum Crock Pot Size: 2 quarts
(if using canned beans u can simmer this stove top for 15, then add last ingred
Ingredients
1/2 cup black beans, dry or 1 can blck beans
3 cups vegetable broth, low sodium, no sugar added
1 (15 oz.) can tomato sauce, low sodium, no sugar added
1 cup water
4 tsp. onion powder
3 tsp. garlic powder
1 tsp. cilantro, dried
3 tsp. cumin, ground
AFTER THE SOUP IS DONE COOKING, STIR IN:
1 cup light coconut milk
1 tbsp. dried basil
1 tbsp. onion powder
1 tbsp. garlic powder
1 tsp. cumin, ground
Salt to taste
Directions
Combine all the "before" ingredients in the crock pot and stir briefly to combine.
Cook on low for 8-10 hours. It's done when the beans are soft and cooked.
