Make Ahead Lunch!

Made 2 things ahead of time last night for my work lunches. I have been working on getting better about A) bringing lunch to work and B) planning ahead. I made 4 servings of the 2 following recipes. Very tasty!

First is a Black Bean, Rice and Veggie "Salad"
1 Container Black Beans drained
1 Pouch Uncle Ben's Whole Grain Medley: Roasted Garlic 90 second rice
1 tbs EVOO
1 can Diced tomato w/ green chilies
1 small zucchini
1 portobello cap
1/4 small onion
green onion (don't remember how much... 1 or 2 stalks)

sautee diced veggies in oil.. divide everything up into 4 containers... bring to work and microwave! VOILA! cal:257 carb: 42.5 fat: 5 protein: 11

Next I made a Apple Pecan chicken salad

1 can of chicken breast
4 tbsp Lite Mayo
1/6 cup ocean spray pomegranate craisins (or cranberry.. doesnt matter)
1/2 of a Gala apple, diced
1 oz of Pecans finely chopped
Makes 4 servings:
if you like fruit in your chicken salad it is so so so good! cal: 177.5 carb: 12 fat: 9 protein: 13
