I just made this salad for my lunch tomorrow. I think it looks awesome and it makes me feel like its summer time cuz it's citrusy and fresh. Just thought I'd share.
Avocado-Citrus Salad
Prep time: 15 min Cook time: None Serves: 6
1/3 C. fresh grapefruit juice
2 Tbs. chopped fresh chives
1 tsp. olive oil
3/4 tsp. sugar
1/4 tsp. salt
1/4 tsp. black pepper
2 pealed and sectioned (cut in smaller pcs if desired) grapefruit
1 Hass avocado, pitted, peeled, diced
2 hearts romaine lettuce, separated into leaves
1.) To make dressing, whisk the grapefruit juice, chives, oil, sugar, salt, and pepper in a medium bowl. Add the grapefruit sections and avocado, toss gently to coat. (This is where I stopped & put mixture in fridge for tomorrow)
2.) Arrange the lettuce leaves on large platter. Spoon the avocado mixture onto the lettuce; drizzle with any remaining dressing.
