Ryvita do a great new range of flavoured crispbreads. Cracked black pepper is my personal favourite, but there's about half-a-dozen or so varieties now and they have more or less replaced all the bread I used to eat.
I love fish, so there's always plenty of fish in the freezer for a quick and easy fishy rice dish. I also have breaded filets once a week too (done in the oven and served with potato croquettes, veg and coleslaw).
And smoked salmon slices are quick and easy with some cottage cheese on aforementioned crispbreads.
Soups are a lumchtime must and so easy to make in a blender with leftover veggies. Add a spoonful or two of low-fat creme fraiche for added creaminess.0
