Does anyone have any good recipes/ideas for what to do with acorn squash as a side dish? I don't prefer my squash to be sweetened with sugars, but rather salty and savory. I'm making pork chops with a rosemary balsamic reduction. Just want the squash to taste yummy with it.

I usually just microwave it and eat it straight up.... Guess I'm not fancy!0

I'm like Pett. Microwave, salt & pepper...but I do like cinnamon/sugar on it sometimes, too. check out allrecipes.com. They have a TON of great recipes.

Most of the ones I found, though are sweetened somehow...maybe you'll have more luck!0 -
Cut it in half, spray it with some butter flavored cooking spray and put salt and pepper on it...bake cut side down until tender. It's good plain, or with a little Parmesan cheese on top.
I know you said you don't like it sweet, but my favorite way is to bake like above. Also bake 2 apples (slice and mix with a little lemon juice, splenda, and cinnamon). Then mix the two together (squash the squash...hehehe) and add a wee bit of butter (or margarine). Its the tastiest thing ever!!!0 -
I slice mine, put on alittle olive oil, salt, pepper, herbs (thyme, rosemary, sage) Bake at 425F for about 25 min.

cut in half, clean. put cut side down on cookie sheet and bake 350 for about 45 minutes when a fork goes in like a done potato turn cut side up and drizzle honey . acorn squash needs LOTS of butter it is not a good diet dish. But it is sure good lol0

Thanks for all of your ideas! Keiko...if you want the recipe for the pork chops (boneless, lean, healthy) let me know! They're my favorite! I ended up making the squash with a little olive oil sprayed on and sprinkled with salt, pepper, and cayenne. I sliced it like one of you recommended. Cooks faster that way! Thanks again!0
