Does anyone have any great and healhty chicken salad recipes!!! I love chicken salad, but mine is so bad for me. I don't like fruit in my though!!!

Try using fat free yogurt, just a little mayo (light if you like it okay), salt, pepper, celery, onion, and some curry powder. It's great in a pita with some lettuce. Mmmm... Or just try that base and change it up with different spices...maybe with some chili powder and cayenne for a little mex style.0

yummy, what a great idea to use yogurt instead of mayo!! Im gonna have to give that a whirl for sure!!

if you google biggest loser chicken salad recipe it comes up
I just made some on Saturday. I used 3 cups of chicken, 1/2 cup celery/apples/grapes and then 1/2 cup mayo (ff) and 1/2 plain yogurt then salt and pepper. It was great and made about 6 servings.0 -
I know that instead of mayo you could substitute plain or vanilla yogurt. Also maybe add some pecans or walnuts!0

WHOLE FOODS CHICKEN SALAD RECIPE
Dressing
1 cup mayonnaise
4 teaspoons apple cider vinegar
5 teaspoons honey
2 teaspoons poppy seeds
Salt and freshly ground pepper to taste
Salad
2 pounds boneless, skinless chicken breasts
3/4 cup pecan pieces, toasted
2 cups red seedless grapes
3 stalks celery, thinly sliced
Method
In a bowl, combine mayonnaise, vinegar, honey, poppy seeds, salt and pepper. Refrigerate until ready to dress the salad. This can be prepared up to 2 days ahead.
Preheat oven to 375°F. Place the chicken breasts in one layer in a baking dish with 1/2 cup water. Cover with foil and bake 25 minutes until completely cooked through. Remove cooked chicken breasts from pan, cool at room temperature for 10 minutes, then cover and refrigerate.
When the chicken is cold, dice into bite-size pieces and transfer to a large bowl. Stir in pecans, grapes, celery and dressing.

Per serving (about 8oz/231g-wt.): 610 calories (390 from fat), 43g total fat, 5g saturated fat, 100mg cholesterol, 500mg sodium, 17g total carbohydrate (2g dietary fiber, 13g sugar), 33g protein0 -
BIGGEST LOSER CHICKEN SALAD
Ingredients:Serves 4
1 pound trimmed boneless, skinless chicken breasts
3 tsp. extra-virgin olive oil
Salt , to taste
Ground black pepper , to taste
3 Tbsp. fat-free plain yogurt
3 Tbsp. Dijon mustard
1/3 cup chopped celery
1/3 cup seedless grapes , each cut in half
1/3 cup chopped red apple
Preheat a grill to high heat.
Rub the chicken all over with 1 teaspoon of the olive oil and season with salt and pepper. Place on the grill and cook for 3 to 5 minutes per side, or until the chicken is no longer pink and juices run clear. Allow the chicken to cool, then cut it into bite-size cubes.
In a large glass or plastic mixing bowl, whisk together the remaining 2 teaspoons olive oil, the yogurt and mustard. Add the chicken, celery, grapes and apple. Gently toss well to combine. Season with salt and pepper and serve.

1 stalk celery, chopped
1/2 medium onion, chopped finely
1/2 medium green pepper, chopped finely
Kraft Mayonnaise ( I use the regular, full fat version)
Natural Sea Salt
Fresh Ground Pepper
Mix all ingredients........................chill and enjoy over a bed of lettuce!!!0
