Oatmeal?
Idk if it's gluten free but it's a great breakfast and very filling!0 -
I've seen "scrambles" with no eggs- just meat and fruit that look tasty.
She makes it hard saying no to eggs lol0 -
glutenfreeda makes instant oatmeal http://www.glutenfreeda.com/index.asp
you can buy it at whole foods and meijer.
almond butter (or any kind of nut butter) on brown rice bread. i usually microwave the bread to soften it up. gf bread can be pretty dense.
eggs are a staple in my diet. it's hard to find snacks on the go if you have a gluten intolerance, i always have hard boiled eggs in the fridge. you should tell your friend to learn to love them : )0 -
Does it need to be a traditional American breakfast food? If not, I'd suggest stir fried veggies wtih brown rice or quinoa. Quick, filling, and delicious. If she wants something more traditional, puffed rice cereal (this is now widely available in brown rice) or look for gluten free frozen waffles or gluten free bread for toast. Also grits (polenta) are gluten free.0

OMG I wish I could still find puffed rice... I'm one of those weird ones, it's been a favorite cereal since I was a kid!!!0 -

Oats are (technically) gluten free. However, since there can be cross contaminated she should purchase Bob's Red Mill Gluten Free Oats to be on the safe side.
There are also a lot of GF cereals out there. Chex, Envirokids, Puffins, etc. She could also make her own granola using Bob's GF Oats. Mix that up with some greek yogurt and she has herself a yummy, protein packed breakfast!
www.foodgawker.com is a really good website to get granola recipes from--- and recipes in general. If she just types in gluten free into the search at the top, she will be able to find TONS of GF ideas for every meal.0 -
Thanks for the ideas everyone. I did spend rather a long time using the search facility but I didn't come up with many breakfast, lunch or snack ideas. I forgot to add that i'm in the UK so I haven't heard of most of the brands that have been mentioned!0

low-fat or non-fat greek yogurt and a piece of fruit is a breakfast option...a lunch option could be slice turkey, a slice of low fat swiss cheese rolled up with veggies inside.0

I have Celiac Disease.
I have been eating a lot of Quinoa for meals. Message me if you want recipes.0 -
I share the gluten intolerance. My breakfast during the week usually consists of rice chex as they are gluten free as well as the other chex cereals with the exception of wheat chex. Also rice krispies! I use either rice milk or almond milk instead of regular milk.
Pamela's makes a good gluten free pancake mix. I make them on the weekends and then freeze them for quick on the go breakfasts. Van's also makes toaster gluten free waffles. They are OK. Usually anything by Pamela's is good. Yoplait yogurt is gluten free so as long as your friend can eat yogurt that is available.
I don't recommend the gluten free english muffins. They are very dry and not good. Also look for anything made by Gluten Free Pantry, their mixes are tasty. They sell at most health food stores and some grocery chains.
As far as bread, the best one I have found is Sam's plain millet bread. You have to toast it but could use for sandwiches. I put it in the toaster oven at work and melt my cheese and warm my lunch meat too. Not sure if all lunch meat is gluten free, but Hormel natural is.
Hope this information is helpful.0
