Alternatives to pancakes

I hate regular pancakes... but LOVE these two healthier versions.

"Sneaky Veggie Pancakes"
4 eggs
1 cup squash (or any other pureed vegetable-I love using sweet potatoes)
1 tsp Cinnamon
1 tsp vanilla

Mix all ingredients well and prepare as pancakes.

"Protein Pancakes"

1/3 Cup Low-fat Cottage Cheese
1/2 Cup Egg-Whites
1/2 Cup Oatmeal (dry)
1/4 Cup Blueberries (or any fresh fruit)
Dash of Cinnamon
Dash of Vanilla Extract

Blend in blender and prepare as pancakes!
