Vegetable Suggestions

Hello-
I am working on October's menu and would like to try one new vegetable each week (or one that I don't usually use). So far I have acorn squash, spaghetti squash, and brussel sprouts. Does anyone have any other ideas for new/interesting veggies that are also pretty universally availible?

    Parsnips are really good (like carrots ... only much tastier). They look like white carrots .... Wal-Mart has them.

    Jicama is really good (raw) in salads - you might find this in with the Mexican foods

    I have not had this in years .....rutabaga. I would like to try this roasted ....hmmmm. These are turnips .... your store would have to have a good size produce section

    Do you have an Asian market in your area? I'm thinking of bok choy and lots of other ones that I can't recall the names of.

    Bok choy is great in stir fries .... yum

    Chinese or Napa Cabbage - this is good in a slaw

    I've become addicted to oven-roasted vegetables - cabbage with red bell peppers, sweet potatoes with purple onions, broccoli, Gives everything a different taste... so yummy and very easy!

    Yes, bok choy is very tasty stir fried with a little olive oil, garlic, and onions... another Asian veggie is Daikon, which is kind of like a mild radish... also good stir fried!

    Daikon!!!!! You have to let it soak in water to allow the pepperiness to draw out, but it is an excellent vegetable and has a GREAT crunchy crispy texture! I love making soups with it!
