I make extra the night before and then mix it with a big bowl of greens - lettuce and spinach. Today I have chicken Marsala and a 5 grain mix. I add feta cheese, cherry tomatoes, and dressing. It's delicious and pretty! I eat 5 times a day, so I also always pack snacks - an apple, string cheese, walnuts. I also love Extend Delight bars - low in sugar and other carbs and really filling.

I pack lunches for my three kids daily because one has a life threatening peanut and tree nut allergy. I am ALWAYS looking for new things to keep them from getting bored!!

Sorry to go off topic a little, but I have a question about this. My son starts school next year and I plan to send his lunch.. I would never, ever want to put another child in jepardy. With your child's tree nut allergy, would sun flower seed butter be an option, or does that fall into the catagory?? I thought it may be safe, since it is a seed and not a tree nut, but would love to hear your take on this.

    Thanks!!

Leftovers is the easiest for me so that's what I bring. If there are no leftovers, which is rare, I'll usually bring cottage cheese and tomatoes, or pb and celery/carrot sticks, or hummus and crackers, or maybe a wrap of hummus, onion and greens.

I know my day care has a no nut policy, however my nephew's school has a "nut free" table that all the kids with nut allergies sit at. The only reason I know this is because my nephew has tree nut but not peanut allergies, and my bil pack him a pbj sandwich earlier this week . . . he was booted from the nut free table.

Firstly, I want to say THANK YOU for thinking of other kids!! We have really had good luck with people being so accomodating with him...but I have heard horror stories on other parents sneaking peanut stuff in just to see what will happen and more. There was a big issue in Florida recently with parents protesting an allergy child and it just breaks my heart to know that that poor child is seeing and hearing that her life isn't as important as someone else's love for peanut butter :(

My son Noah is perfectly fine with Sunbutter...he takes it to school all the time!! In fact, the one that we buy says it was produced in a peanut and tree nut facility :) It is a seed, so therefore it is fine. Noah is allergic to peanuts, cashews and hazelnuts that we know of. We found out when he was only 8 months old when he started wheezing and breaking out in head to toe hives after *I* ate a peanut butter sandwich. He was nursing only at the time...so every time I ate peanut butter, it made his allergy worse. I had no clue :(

    Thank you again!!

    Thanks again :)
