Wholemeal Pancakes

Over the last few weeks I've been trying out lots of different "healthy option" pancakes, but haven't found one I really liked.

So last night I worked on making my own. I had them for breakfast this morning...and they were really good!

But here is the recipe:

(Makes 4 pancakes, 2 pancakes per serve)

Mix together:

1/2c wholemeal flour (wholewheat would be fine)
1t baking powder
1t cinnamon
1t sugar
1/4t stevia (optional)

then I mixed in

1 egg white
1/2c milk (Calci-trim)
1t vanilla essence

The batter is really good, and made the pancakes nice and thick and easy to cook evenly.

174 cals for 2 pancakes. I topped mine with blueberries, gingerbread butter (from Chocolate Covered Katie's recipe) and honey maple syrup! I'm looking forward to adding in dark choc chips next time!

They kept me full longer than my usual two pieces of toast normally do!
