Will they turn out ok? Do I need to blanch them or do anything else to them before freezing?
(besides peeling and cutting that is)

I have never tried it but considering you can buy frozen carrots I would think it is ok. I would try blanching them before freezing them. Sorry I am not more help. Good luck!0

they seem to handle freezing fine from green giant and other pre-packed frozen veggie places....
but if its just to keep them for later use if you have a cool spot they will store most of the winter...
http://www.pickyourown.org/carrotsfreezing.htm will work well, does suggest blanching0 -
I think they taste ok if you freeze them and then cook them (like put them in a stew, steam them etc)...they don't taste good if you freeze them, defrost them, and they eat them (as in carrots dipped in ranch)....0
