Shift worker meals??

I work shift work.. and my days get flipped around switching back and forth. I try to eat light during night shifts and easy to digest foods, but sometimes I get tired and don't prepare ahead of time. Then I go for microwave meals, not often. I pick ones that have a good balance and plenty of veggies.

I have begun preparing extremely large meals for my husband and I.. then freezing the extra to have meals for down the road in the freezer that are still healthy alternatives. But I'm getting tired of wraps, sandwiches, veggie sticks, vegetable bakes and chili. lol...

So, I'm wondering if anyone has some recipe ideas that are good reheats.. or even some fresh mix ideas for sandwiches/wraps... or some good meals that freeze well for preparing in advance. Thank you!

    I've been eating quinoa. I made one cup (dry) and that gave me 4 servings. Then I stir fried vegetables to add in. It warms up nice in the microwave. I used alittle sesame oil & chili paste to stir fry the vegetables. If you wanted more protein than the quinoa has you could add some beans.

  • My mom works a lot of night shifts. Since she going to sleep when she gets home at six am, she doesn't eat anything past 1am. She loves a bag of 100 calorie popcorn and pretzels. She wants things to keep her hands busy during the down time. And LOTS of water. As for her "dinner" meal, she eats right before she goes to work. When I was doing shift work, string cheese was my fav!

    hahah, It's funny you say that because I just had a cheese string.

    Normally when I wake up around 4pm I have a curves bar, protein shake and a banana. Otherwise I'm unsure how to log the calories as I work from 10pm-8am.
