I made one the other day with one tablespoon olive oil and same quantity of balsamic vinegar. It tasted good!

Olive oil, balsamic vinager and any/all of the following

    salt
    pepper
    dried herbs
    garlic
    lemon juice

    experiment in small quantities.

You could always go the "cheating" way and buy Seven Seas dry salad dressing seasoning which even come in a kit with a cruet that has measurement lines right on the bottle! I substitute water for some of the oil.... If I remember correctly, the box has a "low oil" recipe right on it. Or you can even substitute plain yogurt for the oil and have a creamy italian dressing.

I have a simple and easy one for you that my hubby is addicted to
    3 parts olive oil
    1 part apple cider vinager
    sea salt
    crushed black pepper
he likes it on romane lettuce, not my fav but he and the children love it.

So glad I popped in. I already make the 7 seas. I use EVOO, red wine vinegar and a splash of balsamic. I also add some parm cheese sometimes.

I am going to try it with the greek yogurt instead of oil ( I am so SICK of the same salad dressing!!)

it's not making your own, but Newman's Own has a really delicious light sesame ginger that is soooo f-ing awesome.

makes me want to have salad every night, and my ex-linebacker hubby even chose it over super-hi-fat chunky blue cheese.
