Red Peppers!

I was just the recipient of a large bag of all sorts of red peppers. One problem.... I have NO IDEA what the heck to do with all of them! Ideas anyone?

    If you are not going to immediately use them, then you can chop them up and put them in the freezer! It's so convenient to pull out a portion of chopped peppers when I am rushed to get dinner ready.
  • Marinate and grill.. so good even just by themselves

    i eat them raw like apples. I prefer them to apples actually .

    I love to eat them raw in salads or cut them into cubes and use them as crackers and dip into tuna or chicken salad. You could stir fry them with a meat and serve it over rice or make fajita's. As someone else mentioned they do freeze well.

    I eat them raw with hummus or put in salads. You could also make stuffed pepers here's a link to a recipe I use for that. I simply just substitute ground turkey or chicken for the ground beef and brown rice instead of white.

    Roast them on the BBQ until the skin is black and blistery, put them in a bowl and cover with plastic wrap until cool. Peel and seed and free. Now you have roasted red peppers, people pay a premium for these.

    I make a red pepper couli (sauce) out of them.

    I add them to my salads.

    I use them with onion and white wine to make a fast chicken breast dish.

    You can add them to grilled vegetables and make a salad.

    You can "stuff" with goat cheese and pine nuts.

    They are so great for you! and freeze so well.
