I am in need of some good, healthy spaghetti squash recipes! I bought a beautiful squash yesterday at the grocery store yesterday, but don't know what I should make with it.
Any suggestions?!?

You can do almost anything with it! I've baked it and served it as a replacement for spaghetti.

I'm lazy! I usually nuke it in the microwave, pull out the insides and use them as noodles..... so I just toss my spaghetti saucse, or my shrimp right on top.

Sometimes when I want it sweeter... I add some splenda brown sugar and butter. Then I go to Zumba twice to burn the butter! LOL

Skinnytaste.com has a recipe recenty posted for Spaghetti Squash lasagna. Make it just like you normally would in the oven, "fork" it, and layer it with marina sauce, parmesan and mozzarella cheeses, and bake it. Check out the website for the full directions! I'm making it this weekend!

Split in two. Spray lightly with veg. oil spray and sprinkle with S&P. Bake at 450 for 25-30 minutes (depending on size of squash and desired texture). Cool for a bit (until you can handle it with a towel), then shred into a bowl and toss with EVOO, parmesan and additional herbs/spices or garlic if desired. Delicious, and it keeps pretty well for second day meals.

steam it. Then scrape out the "noodles" make a sauce - 1 28oz can crushed tomatoes, 2 tbsp honey, 1 tbsp oregano, 2 tsp basil, 1/4 tsp red pepper flakes (crushed), and simmer for awhile. It is delicious and low in everything.

I microwave mine for 20 mins.(with 1/2 cup water in a microwave safe lipped deep dish. Cut sides down. Then cover it with Saran wrap) then I eat it with Marianna or today I had it with butter and salt and pepper. I hope this helps. I read some where to try it with butter, cinnamon and sugar. Although I have not tried it that way yet. Hope this helps.. :)

I make a vegetable stew with crushed tomatoes, a small zuchinni, a small yellow squash, onion, red & orange peppers, some italian seasoning--cook it up like a soup--make it as thick/thin as you like--microwave the spaghetti squash--remove from skin & pour stew over the "noodles"--you can add grilled chicken if you like--tastes yummy

  • I microzap it to spoon it out into "spaghetti". Then I saute some mushrooms, onions and garlic, and mix in with some reduced fat alfredo sauce (ragu). Mix it all together and you have DELICIOUSNESS!

So, i roasted a huge spaghetti squash on Sunday and have had it spaghetti style 3 times in the last two days...so i decided to change it up and improvise a snack out of it....
Pan "fried" spaghetti squash with cheese

YUM!! SUCCESS!! The pan "fried" spaghetti squash was yummy (i love crispy cheese, so yeah!!) i mixed 1/2 cup of spagheti squash with 1/4 cup of mexican blend (shredded) cheese and a splash of egg white (1/2 Tablespoon). mix. spoon in (pam sprayed) pan. flatten out..med high..about 3 minutes each side. 105 cals

Use other cheeses...mix it up...I WANT MORE!!!!!

here is a link to a picture of it :0)
