    YUM! I made something almost exactly like this for my bf's birthday (and called them Man Cupcakes). I added a "sprig" of bacon and a cherry tomato on top for garnish :)
    They were a huge hit, so I made another version without any topings with an Italian twist by adding marinara sauce, oregano, basil, fennel, and parmesean to the meatloaf... tastes like a meatball :)

    what a great site ... it occurs to me that some or all of the potatoes could be replaced with mashed cauliflower to cut back even more on those carbs and calories
