i just tried pumpkin cake and it was delish. Easy too! 1sugar free yellow cake mix, 15oz can of pumpkin, 1/3 c molasses, 4 eggs , 1tsp nutmeg, 1 tsp cinnamon , mix together for 2 minutes. Then add raisins and chopped pecans if you like. Bake at 350 for approx 35 mins. Check for doneness when a knife stuck in cake comes out clean. This is so good. Approx 198 calories per serv.

    This sounds great but to save tons of calories, just simply take a box of cake mix (I use carrot) and add a can of pure pumpkin, mix and cook!! of course you can add cinnamon and all that too but the molasses and eggs and all that other added stuff really isnt necessary...unless of course you like it that way! It does sound delicious:)

    I just take canned pumpkin, splenda, egg, and fat free canned milk. Pour it into a cupcake liner and bake. It's like a little bit of pumpkin pie filling....so yummy...

    Yes, made this with chocolate cae, my kids even ate it. It was soooo good and so simple with just the two ingredients.

    It is delicious! and its actually much more healthy to feed the kids than regular cake. I feel much better letting my son have a piece of that than any other kind of sweets loaded with sugar
