Questions for non wheat/low carb eaters

I've been seeing a lot about "wheat belly" and low carb eating recently. Not that I am an advocate (I don't want to start some sort of battle here, I know this is a passionate issue for a lot of people), I am simply just curious as to what people who live no wheat low carb lifestyle eat routinely?
My main question is how many fruits/vegetables do you eat? I don't think I could live without vegetables.
Anyone willing to share a sample day's menu?
If I were to give it a go:
Breakfast:
-1 scoop whey protein isolate
-1Tbsp all natural peanut butter
-1 Tbsp flax powder
- 100g of black berries
Lunch:
-Asian style chicken salad (1 cup chopped Romaine, 1 chicken breast, some broccoli, carrots, mushrooms) for dressing (1 tbsp soy sauce, 1 tbsp white vinegar, 1 tbsp olive oil, and 1 tsp dijon mustard, some sesame seeds)
Dinner:
-sauteed veggies (bok choy, gai lan, yu choy)
- Some sort of meat (chicken breast, lean beef, pork) grilled up on the Foreman or sauteed in olive oil with mushrooms and onions.
Snacks:
Apple , Protein bar, 1 oz almonds.

I have gluten intolerance, so I'm one of your non-wheat responders. :-) I eat tons of fresh fruit, vegetables, whole grains (like rice, millet, corn - basically anything that isn't wheat, rye, barley, or oats). I still eat cake and cookies; you know, the sinfully good stuff. But I have to make them with a different type of flour. There are even gluten-free pizzas that are AMAZING at Whole Foods ... you should try Against The Grain Three Cheeses, my husband even loves it and he isn't gluten intolerant. It took some getting used to but after awhile I figured it out.0

You can look at my diary, it's open. For breakfast I have eggs and salmon (or sausage patties, occasionally bacon) & fruit. Lunch might be a smoothie, stew, soup, leftovers or even nothing because I'm often not hungry then. Dinner is whatever we plan--fish or seafood, poultry, meat, with vegetables and usually also have a salad.0

A huge misconception about low carb dieters is that they don't eat vegetables. Where does that come from? The popular low carb diets like Atkins require you to eat veggies. Some fruits are ok, especially in the maintenance phase of these diets. I eat avocados every day for example.0

it's actually not that hard. I'm not strict low-carb yet (still haven't shaken the sugar, though that is next!) I eat a lot of yogurt, a lot of veggies, a lot of nuts, and a lot of meat. I also eat too much cheese, but that's another issue...
One thing I've done is kick up my brassicas and green-leafies to make sure I'm getting the fiber and micronutrients I'm missing from grain. So far, no gut trouble and I feel good and healthy. If you take a look, grains are very high in calories and not so terribly high in nutrients. So, if I'm going to spend my "calorie cash", I'd rather spend it on something where I'm getting a lot in return.0 -
Im on a plan through my Endo 1600 calories/120g CHO daily....
pretty much I have just about every vegetable possible.. its just making sure I portion out the vegetables so I can have not only a complete meal, but enough alotted for the next meal.
Im a BIG fan of rabbit-food and will venture to our Salad bar station at work.... All of my managers know of my dietary restrictions so if I decline doing a taste-test, they dont give me any problem at all....
I did though, find a low carb store-label 'light multigrain' bread. Two slices is only 80 calories and 17g of carbohydrates!!!!!!!!!!!! By the time I add the protein, some vegetables, that is a meal no more than 30-35g of good healthy low-glycemic carbohydrates.... AND its filling too!
I work as a chef, so this is really becoming easier and easier for me... I already notice the room I get in my chef uniforms too.....THAT is a good thing! 8-)0
