low calorie pancakes :-)
I have small kids so they like to eat pancakes pretty often. I found a blender oatmeal pancake recipe online and I've changed it a bit to make it healthier. Its quick and easy and it tastes like a regular pancake!
Put into blender in order:
1 cup flour (I used white flour)
1 cup uncooked quaker oats
2 Tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 cups 1% buttermilk (you could switch to fat free to make it better, I couldn't find any at the store)
2 teaspoons vanilla
1/4 cup applesauce
2 eggs
blend until smooth and cook as you would any pancake.
I used a 1/4 cup measure to portion the batter and it makes 20 pancakes.
each pancake is 56 calories 10 carbs 1 gr fat 2 protein 1 fiber 3 calcium
I've made them 3 times now and it works out to 20 pancakes every time if I use the 1/4 cup measure. Hope you enjoy them as much as we do if you try them :-)

baking powder is activated by the heat of the dish cooking and I think the liquid when you mix it also activates it. Baking soda needs something acidic, the buttermilk in this recipe provides the acidity but you could sub in 1 1/2 cups milk mixed with 1 Tablespoon of vinegar or lemon juice if you don't have any :-)0
