Mini White Chocolate Cheesecakes

So, I recently made the discovery of my love of cheesecake....specifically when white chocolate is involved. I know...not such a good thing to discover when trying to eat healthy. So I immediately went home and scoured the internet for a low fat/low calorie recipe. Here's what I found:

This recipe says it makes 12 servings.

I cut this recipe in half....and still got 11 servings out of it!

I used only fat free cream cheese, and splenda for the sugar.....the white chocolate however was as real as it comes (mmmm)....and at 11 servings it came out to 58 cals each!

They tasted amazing...although they didn't look too pretty.....that's for my second attempt. I plan on taking pictures of the process next time along with the finished product.....so stay tuned.
