Anyone have an easy to make, not too many ingredients, great tasting, low cal chili recipe?? It's definately chili weather here today and I'm cravin some!

    1 tablespoon canola oil 2 cups diced yellow onion (about 2 medium) 1 1/2 tablespoons chili powder 1 tablespoon minced garlic 1 1/2 teaspoons ground cumin 1 teaspoon dried oregano 3 (15.8-ounce) cans Great Northern beans, rinsed and drained 4 cups fat-free, less-sodium chicken broth 3 cups chopped cooked turkey 1/2 cup diced seeded plum tomato (about 1) 1/3 cup chopped fresh cilantro 2 tablespoons fresh lime juice 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 8 lime wedges (optional)

    This is a great one from the Turbo Fire Nutrition Guide:

    1 lb lean ground turkey
    1/2c diced tomatoes
    8 oz whole kernel corn, canned
    1/2 onion, diced
    2 cloves carlic
    8 oz black beans, canned
    8 oz pinto, chili or kidney beans, canned
    1 Tbsp tomato paste
    1 pkg Lawry's Chili Seasoning
    4 oz low-fat shredded cheddar cheese (optional)

    Brown turkey. Drain & discard fat. Place all ingredients expect cheese into a slow cooker. Cook for 4 hours on low or 2 hours on high. Top with 1 oz cheese if desired. Makes 4 servings.

    I may have lifted this from somebody here. Don't really remember. If so, sorry that I can't give you credit.
    My kids love this.

    Sweet Potato Chili

    2 large sweet potato, about 2 pounds, peeled and cut into 3/4" chunks
    1 large onion, chopped
    1 green pepper, core and seeds removed, chopped\
    4 cloves garlic, peeled and chopped
    15-oz can pinto beans, drained and rinsed
    14.5-oz can jalapeno-seasoned petite diced tomatoes
    2 Tbl chili powder
    1 Tbl unsweetened cocoa powder
    1 tsp cumin
    1/2 tsp salt
    1/4 tsp cayenne
    1/2 cup cilantro leaves, chopped
    Brown Rice

    Spray slow cooker bowl with Pam. Layer sweet potatoes, onion, green pepper, garlic, and pinto beans in slow cooker. Combine tomatoes, chili powder, cocoa, cumin, salt, cayenne, and 2 cups water in medium bowl. Pour over veggies.
    Cover and cook high for 6 hours or low 8 hours.
    Stir cilantro into chili.
    Serve over brown rice.

    Makes approximately 10 cups. (DOES NOT INCLUDE THE BROWN RICE)
    PER CUP: Calories = 138; Calcium = 8; Protein = 4; Fiber = 6; Fat = 0; Sodium = 292 (That's what I track, so that's all I know.)

    I make this almost every 3 weeks - most of the ingredients are spices and sometimes I will pre-measure them into small snack size bags so they are done ahead of time. Makes tons and is quick to make.

    Turkey Chili

    2 1/2 lbs. ground turkey (93/7)
    2 tbsp. olive oil
    1 green bell pepper, diced
    1 red bell pepper, diced
    1/2 cup red onion, diced
    4 tbsp. chili powder
    3 tbsp. ground cumin
    2 cloves garlic, minced
    1/4 tsp. cayenne pepper
    2 tsp. salt (I usually cut this in half)
    1 tsp. black pepper
    1/2 tsp. garlic powder
    1 can Hunts no salt added diced tomatoes
    1 can black beans, drained and rinsed (I sometimes add 2 cans instead on one)

    Heat oil in skillet. Add peppers and onions and cook till tender. Add the ground turkey and spices and cook till browned. Skim off excess grease. Add the tomatoes and black beans and simmer for 10 minutes, stirring occasionally.

    I top with shredded lo-fat mozzarella cheese.

    It makes alot. My daughter likes in taco shells or tortillas. I like it by itself with the cheese. We put in containers for leftovers during the week. It takes very little time and uses only one large pan. I can make this after work for dinner that night - no problem.
