Taco Salad Made Over

Makes: 4 servings

What You Need
4 flour tortillas (8 inch)
3/4 lb. extra lean ground beef
1 Tbsp. chili powder
1 cup drained canned kidney beans, rinsed, well drained
1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
4 cups torn mixed salad greens
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
1 large tomato, chopped
2 Tbsp. KRAFT Light Ranch Dressing

Make It
HEAT oven to 425°F. Crumple 4 large sheets of foil to make 4 (3-inch) balls; place on baking sheet. Top each ball with 1 tortilla; spray with cooking spray. Bake 6 to 8 min. or until tortillas are golden brown. (Tortillas will drape over balls as they bake.)

MEANWHILE, brown meat with chili powder in large nonstick skillet. Stir in beans and salsa; cook until heated through, stirring occasionally.

FILL tortilla shells with salad greens, meat mixture, cheese and tomatoes. Drizzle with dressing.

    I made this same exact taco salad for dinner last week!!! I have the taco bowl pans tho. And I used wheat tortillas. They were tha bomb!evilgrin0039.gif

    Did you get the recipe from Kraft.com?

    I was thinking, it probably would be just as great with lower carb/lower calorie whole wheat tortillas. That would take the cals WAY down.

    Oh, no you didn't! Good thing I don't have cream cheese in the house right now otherwise that sucker would be dessert! Zeke's bugging me to bake today anyways. :grumble: Perhaps I can convince him microwave popcorn is baking? LOL

    Good to hear b/c that's what I'll be using tonight! YAY! I think I'm going to try to drape the tortillas over inverted jumbo muffin tins....I think that might work.

    Be careful! They are dangerous! Sure, it says 24 servings...but those servings look mighty small when they taste SO good. Delicious! Have fun making them! *drool* Could you mail me some? Please?! :love:

    Oh! We didn't use ranch dressing, either. I used about a tablespoon of fat free sour cream & it was perfect! My husband had 2. Goof ball

    Perfect! I have about 3/4 of a pound of ground turkey leftover from the diner meatloaf muffins and was wondering what I would do with it. I'm going to try this! Thanks for posting! :flowerforyou:

    I actually just threw it together with no recipe, thought it was cool that this was an actual recipe! But I love tacos, so I make them a million and 1 different ways!
