151 Calorie Lunch
With only an hour lunch break (minus commute home) I sometimes struggle to find something quick, filling and low cal to make. Today I was in a hurry so I quickly assembled this. As I was logging it into the my food diary, I saw that it was only 151 calories!!! Too good not to share.
TACO SALAD:
2 Cups Garden Salad (I used Compliments bagged salad)
6 Yellow Round Tortilla Chips - Crushed
1 Slice Marble Cheese, Shredded (15 g)
1 TBSP Salsa
Place Tortilla Chips on a plate & add cheese. Microwave for 10 seconds. Place crushed chips on top of bed of salad. Top with 1 TBSP Salsa.
You could easily add more chips/cheese, chicken, beef and still stay within your lunch calorie limit, or even substitute for baked chips and low fat cheese and add more. I think this would also make a good side dish for supper

that's what I was thinking. While it does sound like a healthy option, 151 cals isn't enough forr a lunch. Plus you're seriously lacking on good whole grains and proteins. Throw some diced chicken on there and have a slice of garlic toast with it and we're in business.0

I had a 274 calorie lunch:
2 servings of steamed vegetables (54 cal)
1 3-oz grilled chicken breast (140 cal)
1 red delicious apple (80 cal)
I bring this to work 4x per week, and it saves me hundreds of calories and tens of $.0 -
Sounds like a perfect lunch to me!:bigsmile:0
