Healthy Birthday Cake Recipe??

I'm making a birthday cake, and I'm wondering if there is a recipe somewhere for a "healthy" cake and frosting (that I don't need to spend a ton of money on ingredients that I'll never use again). It probably doesn't exist, but I'd sure like to try.

    I just made mine with a box of cake mix, a can of diet soda and a couple egg whites. Frosting was ff Cool Whip. You can do it with any flavor combo of cake and soda you want.

    for my birthday (in june) I had angel food cake with cool whip and strawberrys

    WINNER!!! This one is easy and you don't have to actually bake anything! (No need to buy flour or other ingredients that will get old and buggie!!)

    Thanks for the tips. I'm avoiding anything with artificial sweetners (the best I can), so the pop is out. I'm looking for more than just low calories. I'm looking to avoid highly processed ingredients, chemicals, artificial sweetners. Sorry - I should have been more clear. The angel food with cool whip might be okay - lots of sugar, but I suppose that's hard to avoid when making a cake. Maybe I'll just have to avoid the cake.... I think I'm looking for the impossible.

    Hi there,

    I guess that the best way of having healthy birthday cake is having a small portion!

    The only other thing I could suggest is using light butter or margarine (it works fine in baking) and maybe half and half sugar and sweetner? (I don't like sweetner, but hey...) My mother used to use wholemeal flour but I find it nasty in a cake that should be made with white flour.

    Maybe you could make small cupcakes instead of a big cake to help with portion control?

    I don't think things like carrot cake or zucchini cake are any lower in calories, but you could check.

    In terms of frosting, what about just a dusting of icing sugar and some berries on top?

    If it's your birthday, I'd say make the cake you want, eat a smallish bit and enjoy! Maybe find some enjoyable exercise to do for your birthday i.e. trip to a park, lake, beach etc or whatever you'd enjoy (10 pin bowling, ice skating)?

    I don't think it's a good idea to bake with diet pop. Aspartame is not intended to be heated, you could try splenda instead.

    Thank you!!! I knew someone would have just what I needed! The Chocolate Sour Cream Cupcakes look just about perfect!!! Except, I don't know what Sucanat is - I'm off to look it up.

    And thanks to everyone else too. The cake is for my daughter's 19th birthday, which is today. I LOVE cake, so I was hoping to have a little. I might not have time to do this today (wasn't positive I would anyway) -but I'll save this till the next time. Today I'll probably have to buy one and either avoid it or have a very small bit of it. Thanks again!
