Heya! My dad has type I diabetes, so I'm always trying to whip up yummies with no or very low sugar. As well, I'm always looking for ways to lighten up favorite treats. I want to make some blueberry muffins. Does this recipe sound like it would work? Any suggestions?

Serving size: 12 muffins

1.5 c whole wheat pastry flour
.5 tsp baking soda
1 tsp baking powder
.5 tsp salt
1.5 c blueberries
2 tbsp whipped butter
2 tbsp unsweetened applesauce
2 tbsp canned pumpkin
.25 c Eggbeaters
.25 c Vermont sugar free maple syrup
.25 c OrganicZero (erythritol)
1 oz. cranberry juice
1 tsp cinnamon
.5 tsp nutmeg
.5 tsp vanilla extract

Wow! That sounds yummy!! It should not have too much of a carb impact, except for the flour and juice. Then again, you can't make baked goods without flour! Have you entered that recipe on like spark recipes or one of the other ones to see the # of carbs? I would so he can bolus or calculate his insulin shots correctly.
