Sugar and Dairy free Tapioca Pudding
I decided to be adventurous and experimented with one of my favorite desserts, tapioca pudding. I use Minute Tapioca and instead of the regular milk the recipe on the box calls for, I used unsweetened Blue Diamond Almond Milk. Then instead of the 3 tablespoons of sugar, I used 1 tablespoon of Truvia (a Stevia sweetener) I like the sweetness of it, not too much, but you could adjust it as you like. Came out with the same consistency as the "normal" recipe, with just a slightly different taste. Came out at 53 calories per serving, 1/6 of the recipe.
