So, Saturday's dinner was absolutely delicious! Even my super picky hubby loved it. After watching the Pioneer Woman on Food Network, I decided to lighten up two of the dishes she made. These dishes are super great for weekdays too because everything can be prepared the day before and just thrown in the oven when you get home. Complete, homemade dinner for just over 500 calories! Garlic Crusted Steak:
I love making variations of this. There is no breadcrumbs in this recipe, but it still forms a nice crust. I also like to make it a few hours before I am going to use it so the flavors have time to develop. You can play around with the fresh herbs and acid you use. Yesterday's meal I used parsley and balsamic vinegar. Cilantro and lime juice is super good for Mexican meals, basil and lemon juice is a great combo too with a little soy sauce!

4 garlic cloves, smashed into a paste with 1 tsp sea salt
1/3 cup finely chopped parsley (love my magic bullet for this!)
1 Tbsp balsamic vinegar
1 tsp ground black pepper
1 lb. sirloin steak, fat trimmed

Any type of steak - also great on pork, fish, lamb..etc

Add garlic paste to bowl, then add remaining ingredients and mix well. Refrigerate for at least 1 hour before using.

Apply mixture to both sides of meat before placing on girll.

Super simple and super delicious!

Makes roughly 4 servings (4-4 oz steaks)
