Easy Pumpkin Burrito Filling

So, I just discovered this recipe through a little...kitchen experimentation I love pumpkin and how it can have a delicious savory quality--pure pumpkin really isn't that sweet. Well, the result of my experiment is an easy, delicious burrito filling (or topping for rice or lettuce) that can be altered to many different tastes. And it's quite in the spirit of autumn!
You'll need:
1/2 cup of pure pumpkin (canned Libby's stuff is what I use)
1/4 - 1/2 cup of beans
a bit of minced garlic
spices to taste (i.e. taco seasoning)
Spray a little pan with some nonstick spray and heat it up. Toss some garlic in (I get mine pre-minced in a jar) and let it sizzle for a bit. Then, toss in your beans. I just get mine from a can (make sure you drain and rinse, of course).
Let those cook for a bit, and add spices. I added a 2-3 tsp of taco seasoning, salt, pepper, cumin, cayenne...honestly, whatever you have on hand to make it flavorful. Even a dash or two of soy sauce wouldn't go awry. Then add your 1/2 cup of pumpkin. Stir thoroughly so everything's call mixed up. Cook this for a bit: 2-5 minutes.
And that's it! Load it up into a tortilla (or some rice, or some lettuce) with salsa, cheese, corn, veggies...whatever you want. You'll have a meal that is under 300cals and 5g of fat, if that!

I used 1/4 cup of edamame and a low-cal tortilla from La Tortilla Factory: my stats were 210 cal, 5g fat, 39 carbs, 13g of protein, and 16g of fiber.
