Can you lose weight if you're under your calorie count, but over your fat intake? I have been paying more attention to the calories, but I don't know if that's what I should be doing.

Yes you can. Calorie Deficits trump everything as far as losing weight in both the short term and long term. However you should keep your fat intake between .35-.75g per lb of bodyweight.
