Need help with cake

I need a cake that I can do for my husbands birthday that is some what healthy so I can eat some of it also. I have looked on different sites. im not a baker so it needs to be easy too. Does anyone have any reciepes they would like to share....please help

    His fav kind is chocolate...thats why im having a hard time finding healthy one.
  • Take 1 sugar free cake mix and mix with one can of diet coke.... stir well... let set five minutes... take desired pan and spray with cooking spray... bake according to the back of box... you can experiment with different flavors I like chocolate with diet coke... for icing I use Fat Free Cool whip thawed and stir in 1TBSP of peanut butter... It's really good!
  • Learned about this cake at Weight Watchers:

    1 box Devil's food cake mix (any brand)
    1 egg
    1 can Diet Coke

    Mix together well and bake according to directions on box.

    Frosting:

    1 tub Fat Free Cool Whip or Lite Cool Whip
    2 tablespoons Hersheys Chocolate Syrup

    Mix together.

    Easy and about 200 calories per slice
    Makes 12 servings in a 9-1/2" x 13" pan

    1 cake mix and 1 15 oz can of pumpkin.... nothing else! Mix it welland make it into 12 or 18 cupcakes, they are divine! Choc works well!

    because it's a birthday and they only occur once a year I would make the cake and not worry about it being healthy. Just eat one slice (maybe a small slice) and enjoy it. If you don't want it around the house because it's too tempting just have your husband take it to work or give it to a family member that isn't watching what they eat. Just my opinion.

    Jim's Banana and Walnut Loaf

    I Cant Believe Its Not Butter - Light, 8 tbsp (14 gram
    Wholemeal Self Raising Flour - 240g
    Walnut Pieces, 100 g
    Banana-Medium 4
    Baking Powder, 10 g
    Eggs 2
    Light Brown Soft Sugar, 170 g

    Preheat oven to 350 F degrees or Gas mark 3. Lightly grease a 9 x 5 inch loaf pan.

    Beat together the butter, sugar, and baking soda in a medium bowl until smooth.
    Add the banana,and eggs, beating until smooth.
    Add the flour and nuts, stirring until smooth.
    Spoon the batter into the prepared pan and let it rest at room temperature, uncovered for 10 minutes.

    Bake the bread for 50 minutes. Lay a piece of foil gently across the top and bake 10 to 15 minutes more or until a cake tester (like a toothpick) inserted into the center comes out clean.

    Remove the bread from the oven and allow it to cool for 10 minutes before turning it out of the pan onto a rack to cool completely.

    I just get a regular duncan hines cake mix and use applesauce instead of oil and whipped cream on top instead of icing. Not the greatest health food but if you have to have cake it works.

    Bake a real cake and have a small serving. Try to make it fit in your daily allowance!

    Cake that is healthy sounds like an oxymoron to me. The only thing I can think of would be a fruit tart maybe.
  • I make this cake all the time. Sugar, Gluten, and Flour free...and sooo delicious. One piece will fill you up!

    Light Sponge Cake - Only 100 Cal Per Slice Recipe

    Submitted by singing_girl

    Makes 8 servings




    Beautiful light sponge which is low fat/low cal

    Ingredients
    3 eggs
    1 pinch of salt
    1/2 c sugar
    1/2 c corn starch
    2 tsp flour
    1 tsp baking powder
    Directions
    Separate eggs. Beat egg whites and salt until stiff.

    Add sugar gradually and beat until stiff and sugar has dissolved.

    Add egg yolks. Beat until well blended.

    Sift together cornstarch, flour and baking powder and fold into the mixture.

    Pour into two 20cm (8 inch) greased and lined cake tins.

    Bake at 190c (350 F) for 15-20 min or until cake springs back when lightly touched.

    Leave in cake tin for 10 min before turning out onto a wire rack to cool.

    This cake is especially good if you sandwich the 2 layers together with raspberry jam and freshly whipped cream. Allow extra cals, maybe sprinkle icing sugar on top to make pretty.

    I just tried this over the weeked and it is devine - I used Betty Crocker's Chocolate Fudge Cake mix. However, depending on how he likes spice/pumpkin - I would say that a Spice Cake Mix would work wonderfully! Especially with a cinnamon cool whip icing. For the icing, you could combine fat free cream cheese, powder sugar, cinnamon and fat free cool whip - YUMMY!

    YUM! This sounds awesome! I will have to try it! Thanks for the idea of Fat Free Cool Whip. I wonder if the fat free Cool Whip comes in chocolate?

    i don't know what you like, but one cake mix, i can (12oz) DIET soda, use a frosting made from sugar free, fat free pudding mix and cool whip. i would steer clear of sugar free cake mix and frosting, my dietician told me you're better off using regular bc the fake sweeteners they use (NOT splenda) and if you have experience with sugar free candies, etc you know how horrendous these things are on the consumers intestines! but, seriously! this recipe is so eassyyy! may i suggest carrot cake mix, 1 can diet gingerale- mix well! bake as directed! then use sugar free, fat free jello pudding cheesecake flavor for the topping and sprinkle with a teensy bit of ground ginger (from the spice rack!) but, really, any diet soda, any cake mix, any pudding mix is awesome- we use this recipe all the time;)

    Two suggestions:

    Try skinnytaste.com. I made their pumpkin muffins using a cake mix and canned pumpkin. She shows all the nutritional info also. TONS of recipes.

    At a party once, someone made this cake which was Angel Food Cake mix and Canned crushed pineapple. It was so light and delicious. She said it was an old Weight Watchers recipe so it may be worth it to google it.
