    I made the Chinese New Year Crockpot Beef recipe yesterday. I did all the prep wok on Monday night and then put in the crockpot on Tuesday morning. When I came home from work my house smelled of ginger and garlic goodness. I made a side of brown rice and then added the water/cornstarch about 20 minutes before service. Served with a side of fresh pineapple.

    I have two young boys (9 and 6) - both surprsingly gave it enthusiastic thumbs up. My husband liked it as well and we had enough left for him to take to lunch as well as an extra serving for leftovers.

    The flavor was very good. My only concern (which I sort of expected) was that the zuchini and red peppers were very mushy. If I make this recipe again, I may stir fry the veggies right before serving with some garlic and ginger and then add to the meat/gravy mixture.

    Otherwise, i thought it was very good and easy. I like that the ingredients were things I had in my cupboard and I didn' thave to go to specialty stores to get anything.

    Nice recipe. I give it 4 out of 5 smiley facees. : ) : ) :):)

    I made the crockpot meal tonight.

    I served it over rice noodles. I actually wish I had served it with Jasmine rice because together the noodles and the crockpot were mushy and the rice would have bulked it up a little. I used a yellow bell pepper instead of a red one.

    The flavor was really good. But since I like things spicy, I ended up mixing in some Sriacha sauce.
    My house smelled great today!

    I made the fajitas last night. I used more steak because i have four members of my family to feed - so moved it up to 1# of the beef - otherwise kept everything else the same. Served on a Low Carb Whole Wheat toritilla. I had two for under 400 calories - it was very good and a recipe that I will use a lot. Very easy and fast! Nummy!

    I added onions and mushrooms to mine and put over brown rice....very delicious! :-)

    Week 3 Recipe

    Garden Fresh Fajitas

    ~Put 1 TBSP Extra Virgin Olive oil in skillet - turn stove on medium-high
    ~Slice 6-8oz of beef sirloin tip thin steak and place in skillet. (chicken can be substituted and vegan's can skip this step and add 1/4 cup black beans at the end)
    ~Cook about 5 minutes for med well - longer for well or chicken
    ~Slice 1 green bell pepper, 1 red bell pepper, 1 sweet onion and place in pan
    ~Cook on medium 5 minutes with lid on
    ~Flip meat and veggies occasionally
    ~Add 1.5 TBSP fajita seasoning (I make my own - see recipe below, but if short on time you can use store bought fajita seasoning. I prefer to use my own because I can control the sodium.
    ~Add 1/4 cup water
    ~Cook 5 additional minutes

    Scoop 1/3 of the mixture out and place on La Tortilla Factory Tortilla
    Add 2 TBSP fresh salsa (meat, veggies, salsa, and tortilla ~273 calories)
    ~Add 1/4 cup 2% cheese for an additional 80 calories
    ~Sometimes I will omit the tortilla and place on a bed of rice with 1/2 cup of black beans (443 calories)

    We just made an adaptation on this for dinner...
    Used chicken as the meat and corn, mushrooms, onions, tomato as the veggies... no salsa since we didn't have any, and no spices since DH gets sick with them. We did use La Tortilla though ;-)

    But thanks for the idea, it's nice to not have to think too hard about the menu for the week!

    I just took out my chicken to thaw..making the low fat chicken nuggets with zuchini and marinara tonight. Will let you know what the family thinks!

    I made the low fat chiken nuggets, breaded zuchini with marinara. How do you add a picture..want to show my "masterpiece"...ha ha.. Actually, the kids loved the chicken nuggets and marinara. They did not like the zuchini...but hubby said it was "okay"....I sort of liked the zuchini, I always apprecitate a new way to fix a veggie...but b/c no one else liked it, I will probalby serve the chicken and marnara with whole wheat pasta the next time I make this. The kids said I need to make this weekly, so that was a great recipe addition to my low fat cookbook. Thank you!

    I made the chicken and vegetable with couscous last night for dinner. I chose frozen broccolli as my vegetable. It was pretty good. Definitely a nice healthy choice and quick to make...but, not over the top with flavor. The kids always like to give what I make a grade - this got a B. But, we will add it to our recipe book and I'm sure we'll make it now and again. Fast and healthy...and a warm meal on a cold day! :)

    Made the cream of potato soup today...very fast and easy. Creamy and delish! I will make this again on a cold day! Nice recipe.
  • I'm so behind on recipes! We finally made the fajitas tonight. The only changes we made were to leave out the onion (hubby doesn't like them) and add some zucchini instead. It was a very quick meal, and would definitely be good for those busy nights. But I felt like it was missing something. I think next time I might marinade the steak or do a dry rub or something - I think the steak just tasted like steak, and not so spicy.

    But it made some leftovers, so that's a plus!
