Anyone know any great easy, fast polenta recipes? Preferably not cooked up like oatmeal, and not sweet. Maybe something mushroomy? Thanks!

    Ingredients
    4 cups water
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1 cup cornmeal
    1/4 cup olive oil
    1 pound button mushrooms, sliced
    1/2 small onion, minced
    4 cloves garlic, minced
    1 tablespoon dried basil
    1 tablespoon chopped fresh parsley
    Directions
    1.In a heavy saucepan over high heat, bring water to a boil with salt and pepper. Slowly pour in cornmeal, stirring constantly with a wooden spoon. Reduce heat to low and cook 20 minutes, stirring frequently as the mixture thickens.
    2.Using a wet spatula spoon the cornmeal mixture (polenta) 1/2 inch thick onto a sheet of wax paper. Set aside to cool.
    3.Preheat oven to broil. Lightly grease a baking sheet.
    4.Heat oil in a large skillet over high heat. Cook mushrooms, onion, garlic and herbs in the hot oil until mushrooms are tender.
    5.Cut cooled polenta into squares and place on prepared baking sheet. Broil until browned on both sides. Serve with mushroom sauce.

    Ingredients:
    -Crushed tomatoes
    -Onion
    -Garlic
    -Mushrooms
    -Any kind of ground meat or some sausage (optional)
    -Tube of polenta
    -Shredded cheese

    Saute some onions and garlic in a pan until translucent
    Put the can of crushed tomatoes in the saucepan and turn down the heat
    Add some mushrooms, or any other veggies you like- i add mushrooms, peppers, zucchini etc
    Simmer for a bit.
    In another pan, brown the ground meat (optional), and then add to saucepan.
    Cut the polenta up into slices, and layer in a casserole dish
    Pour the sauce mixture over the polenta.
    Throw a little grated cheese on top.
    Pop it in the over at 400 until cheese is melty and bubbly.
    Serve! It is healthy and yummy. Calories vary depending on how you make it- but I made one with chicken sausage, and divided the huge casserole dish into 4 servings. each HUGE serving was 400 calories. and it was yummy~

    I love polenta it is so good. Another way to eat it other than with sauces on top, is if you have leftovers you can cut it up in squares and bake or fry them up ina little olive oil. Nice for the next day.
