Greek Chicken Pasta Salad

Made this for dinner last night and it was super tasty! Good hot or cold.
Makes 6 servings about 450 calories per serving.
Ingredients:
2 boneless skinless chicken breasts (about 1 lb) cut into bite sized pieces.
One large tomato chopped
1/4 cup kalamata olives chopped (I used about 6)
1/2 cup crumbled feta cheese
2 tbsp lemon juice
1/2 onion chopped
2 cups baby spinach
3 cloves garlic crushed
1 tbsp olive oil
1 package (14.5oz) whole wheat penne
1 can artichoke hearts in water, chopped
Directions
Prepare pasta according to package directions.
While pasta is cooking, heat olive oil in a large non-stick skillet. Add onion and garlic, saute until onion is translucent. Add in the chicke and cook until browned on all sides. Add lemon juice, olives, artichoke hearts, and tomato. Saute until tomatoes are cooked.
Drain pasta and add to sauce. Stir in spinach and feta--the heat from the pasta and sauce will wilt your spinach.

haha... my husband does appreciate it! I have so many recipes saved in the recipe maker and never really thought about sharing them before... I will continue to do so!0
