Turkey and Zucchini Lasagna

I've been experimenting with more meals lately.

This recipe served 2 people.
I sliced 2 zucchinis into thin strips, sprinkled lightly with salt and baked for around 10 minutes, then I lay them on a paper towel to drain out some of the moisture.
While that was happening, I cooked 300g of ground turkey and added 4 button mushrooms and quarter of a red onion. Once it was mostly cooked I added some Thai Sweet Chilli sauce and 1.5t crushed garlic.
In a tray lined with baking paper I spread the meat along the bottom, lay the sliced zucchini over top, then sliced tomato, sprinkled with edam cheese and bread crumbs.
Bake at 210 degrees (celcius) for 35-40 minutes until the cheese and breadcrumbs are crispy.
I served mine with baby spinach leaves.
Half of this (one serving) came to about 420 cals. It's a pretty large serving! I'll definitely make this again one day.
