Low Fat Strawberry Banana Muffins

My daughter wanted to make muffins this evening for tomorrow's breakfast. Threw this together hoping it would come out ok, and it is very yummy and low cal! Granted I used ingredients on hand, so to modify, sub the pancake mix with flour and add 1 teaspoon each baking soda/baking powder. I do think the honey flavor of the mix helped the taste.

Bake at 375 for 20-25 minutes.

Krusteaz - Wheat & Honey Pancake Mix, 1 1/2 cup
Bananas, 2 small (6" to 6-7/8" long)
Mott's - Applesauce Natural (Individual), 1 snack cup
Splenda, 1/2 cup
Dark Brown Sugar, 1/4 cup
Fresh Strawberries, 1/2 cup chopped
Egg Whites, 2 large

    wow, that sounds yummy! I never thought about using that wheat & honey pancake mix in place of flour but that is my all time favorite pancake mix and I use it all the time! Great Idea!!! Thanks!

    I just discovered it this past weekend. I'm a bisquick girl, but I saw "Wheat" and reasonable calories and got it. The pancakes were pretty good, so why not use it in muffins. :-)

    May have to get more mix as the family has already cleared out the muffins. I see a new recipe in the future! :-)

  • How many servings does this make? Just want to make sure I'm making 98 calorie servings not 250 calorie servings :)
