Modified Lasagna? Pizza Casserole? both? (pics)

So this was my dinner tonight (and will be my lunch tomorrow) and it was super yummy! I recently discovered the awesomeness that is Fiber Gourmet pasta. 2 oz. is only 130 calories instead of the 210 for 2 oz of regular pasta...and it's chock full of fiber. So this was my spin on lasagna....but tasted like pizza with green peppers......so you can decide what to call it. and i remembered to take pictures as i cooked!
Ingredients:
1 box (8 oz) Fiber Gourmet Penne Pasta
1 cup Yves veggie ground round
3/4 cup green pepper chopped
1 cup yellow onion chopped
2 cup Ragu (light) spaghetti sauce
1 1/2 cup Kraft Shredded Mozza-Cheddar
Directions:
Cook pasta according to box directions. I also warmed up the onion, veggie ground round, and green pepper in a skillet and added a little seasoning at the same time.

Put Pasta in 9x13 baking dish (or dish of your choice). Then add "meat" mixture, and sauce, and mix it thoroughly. Add half of the cheese and mix it all together. Then sprinkle the remaining cheese on top.

Cover with foil and bake at 375 for 20 minutes. Remove foil and bake another 10 minutes until bubbly.

I split it into four servings at 329 calories a piece. It was a big portion, very filling, and tasted so good I want to warm up my left overs right now just remembering it.

No, I ordered the pasta online. The Fiber Gourmet website sells it, but I'm pretty sure they only ship to the US. I'm in Canada, so I bought it from lowcarbcanada.ca
But it is sold in stores, you'd have to check out their website to see where the closest one is for you.0
