I just received beets in my CSA (community supported agriculture) box. Although, I love beets, I have never bought one or cooked one. Well, I found out just how easy and fast they are to roast. And it was perfect in my salad. Along side some handmade spinach-basil pasta. Nom Nom!

Yummy pics to go with the Instructions: http://www.oatmealinmybowl.com/2011/10/05/roast-beets/

Thanks for sharing. That is great to know that beets are easy to make. I've never cooked a fresh one either! Unfortunately, usually eat them out of the jar. But I would love to try them.
