Canape/snacks ideas?

I have my book group ladies coming round on Friday and we always end up eating delicious but really unhealthy snacks. Does anyone have any good ideas for quick but healthy nibbles?

    Veggie sticks and healthy dip (like home made hummus or tatziki (sp?))
    Cucumber sandwiches made with wholegrain bread and low fat cream cheese
  • Veg crudites with hummus, some mini chicken kebabs, seasoned chicken pieces, Just think platters of healthy food?

    You can have fresh veggies (cucumbers, cherry tomatoes, carrot sticks, celery sticks, etc) with hummus for dipping- or a Ranch dip. Sometimes I mix a packet of Ranch Dip mix with fat free Greek yogurt (no one knows it isn't sour cream!) You could make a smoked salmon dip with Neufchatel cheese and serve it on top of sliced English Cucumbers. You can toast some mixed nuts in the oven and add a little spice to them. Have fun with your gals!

    Servings Ingredients
    1cup chopped apples
    3oz unsweetened apple juice frozen concentrate , undiluted (1/3 cup)
    1/4tsp ground cinnamon
    1pinch ground nutmeg
    1/4cup SPLENDA® No Calorie Sweetener, granulated
    1/4oz cream cheese
    1eggs
    4phyllo pastry dough sheet , thawed
    1cooking spray
    1/2cup graham cracker crumbs , divided
    1/2tsp ground cinnamon



    Directions
    1 Heat apples, apple juice concentrate, cinnamon, and nutmeg in a pot over medium-high heat until it boils.
    2 Lower heat, place lid on pot, and simmer 5 minutes until almost all the liquid is absorbed. Let mixture cool to room temperature.
    3 Using an electric mixer, beat Splenda and cream cheese until fluffy. Beat in egg.
    4 Gently fold apple mixture into cream cheese, cover, and reserve.
    5 Preheat oven to 350 degrees F. Spray a baking sheet with nonstick cooking spray and set aside.
    6 Lay one sheet of phyllo on a large flat surface, with the remaining sheets covered so they do not dry out.
    7 Coat phyllo with cooking spray and sprinkle evenly with 2 teaspoons graham cracker crumbs. Do the same to each sheet of phyllo.
    8 Slice each phyllo sheet into 6 squares. Spoon 1 teaspoon of apple mixture onto each square.
    9 Fold each square on the diagonal to cover apple mixture, forming triangles. Pinch the edges. Arrange on a baking sheet.
    10 Sprinkle each apple triangle with cinnamon. Bake 10 minutes. Let cool.

    14oz canned artichokes hearts, drained , rinsed and chopped
    2tbsp fresh basil , minced
    2tbsp olive oil
    1/2tsp seasoned salt
    1/8tsp black pepper



    Directions
    1 Slice the baguette into 32 pieces and arrange on a baking sheet. Spray bread slices with cooking spray and bake at 325 degrees Fahrenheit for 7 to 10 minutes. Let cool.
    2 Mix together tomatoes, artichokes, basil, oil, salt, and pepper. Spoon mixture onto bread slices.

    Servings Ingredients
    2tbsp Cream, whipping, heavy
    2tbsp sour cream
    3tsp horseradish
    1/4tsp fresh lemon peel
    1/4tsp salt
    1pinch black pepper
    4Tortilla, flour, 6.5" , warmed
    1/4lb sliced roast beef, deli meat, Italian style (equal to 4 slices )
    4Asparagus, spears, cooked, drained, 1/2" base



    Directions
    1 Using electric beaters, whip cream until soft peaks are formed; gently fold in sour cream, horseradish, lemon peel, salt, and pepper.
    2 Spoon 2 teaspoons of cream mixture onto each tortilla and top with 1 slice of beef and the rest of the cream mixture. Arrange 1 asparagus on each tortillas and roll up. Cover with plastic wrap and chill for at least 2 hours. Cut into 1/2 inch pieces.

    almonds, they have so many flavors now and all are good and good for you. Fruit salad, cheese & apples, pretzel thins, popcorn. Water with lemons:)
