I whipped up this 'Soup' or 'Stew' in 15 min or so last night and just had some for lunch and I love it!!!!
It is super easy, and pretty boring but if you season it right it is yummy, and filling and a little salty

Ingredients:
-1 or 2 big crowns of broccoli
-half of a large head of cauliflower
-Seasonings, I used seasoned salt, and a dash of soy sauce and pepper

Put on a big pot of water to boil
Cut up broccoli and cauliflower into bite size pieces
Boil the veggies for about 10 min
Drain, and dump into a bowl or into the food processor
Mash (or process) until they are at your desired consistency
I added about 2 cups of H20
I think it would be great with chicken stock/broth.
My soup is thick, and a little lumpy- but is full of fiber and good nutrients~
Try it!!! It tastes like chicken soup with rice (in the form of cauliflower and broccoli~ with no chicken!)
It comes out to 10 servings of 1 cup each at 40 calories. 8 carbs, 0 fat, 3 protein, 3 fiber
I just had 2 cups of it for only 80 calories!
I would imagine that you could also add tofu to make it more protein rich

Enjoy!
