Cooking Tilapia

Hello guys!


I'm looking for some suggestions on how to cook Tilapia from frozen, last time I did, I ended up overcooking and wasn't very good.

    I put the tilapia in warm water to defrost and then pan saute it in olive oil with herbs (parsley, lemon, dill, sea salt and a little black pepper). Depends on how thick the fish is it is 3-4 minutes per side. My dad is a fisheries biologist so I have been cooking fish pretty much all my life. This is a recipe he originally gave me which I converted a bit. I serve it with either brown rice and veggies or just the veggies..preferably broccoli or brussel sprouts.

    i dont normally cook it from frozen unless its pre breaded and says on the package to cook from frozen..
    i usually just thaw it in the fridge the night before and its good to go.
    with the prebreaded stuff, i heat the oven to 400 and put the fish on a cookie sheet.. usually bake for about 20 minutes
  • I usually let it thaw before cooking it and cook it for about 4-6 mins on each side (depends on size). And of course, season it and cook in olive oil.

    Easiest thing to do: broil it!
    I put the fillets in warm water for a couple of minutes before unwrapping them. Then I sprinkle them with lemon pepper seasoning and set them as high as possible in the oven and broil for 3 mins, then flip them and broil for another 4 mins. Done!

    Just Fry in a pan with a little oil or if you avoid oil. Just poach it with chicken broth. if its a thin piece. 5 minutes should be perfect.
    though I just touch my fish and if it has a little give and isnt firm then its usually perfect. But that doesnt work for everyone.

    Thaw it in a bowl or pan of cold water first. Fish does not come out well from a frozen state. Put it in a sealed freezer bag or even better if you have a vac sealer thing, use one of those and thaw it in cold water NOT warm water...it must be cold water.

    You really need to thaw it first. Otherwise the outside will be overcooked no matter what you do cooking it straight from frozen.

    that's not true. You can cook fish from frozen and it doesn't effect the taste or how it cooks unless its freezer burnt
    We serve basa at the restaurant where I work. it goes straight into oven with Butter, No defrosting. The only fish that we defrost first is Tuna but thats because it needs to be cooked rare.

    Your fish must be super thin. Either way it is a lot easier to just defrost it. Otherwise you will most likely end up with an overcooked outside and possibly an undercooked inside, since you have to cook it longer just to get the heat to penetrate inside long enough just to properly cook the inside. Some people, once they see the outside is cooked, if from frozen, think it is done, except when they cut inside it is raw.

    Same goes for any meat, fish, poultry. The closer to room temp it is, right before cooking, the more even it will cook on the inside.
