Healthy Quiche recipes?

Getting ready to entertain for a brunch and want to make quiche. Does anyone have a good AND healthy quiche recipe to share? Thanks!

    Maybe adapt one of your favorite recipes? You could try a crustless quiche - the crust has heaps of calories. Or sub phylo for the pie crust. To cut calories try half eggs, half egg whites/egg substitute.

    Spinach and feta are wonderful - and since feta is a strong flavor, a little feta goes a long way - you don't need as much as other melty cheeses. Crumbled bacon is a nice way to add a lot of flavor for not a ton of calories - it's about 30 cal per slice.

    I typically use egg beaters, 1% milk (add a teaspoon or 2 of flour) and 2% cheese. I stay away from high fat meats (sausage & bacon).

    Ham, cheddar, and broccoli makes a good quiche. I read in a post somewhere - subbing phylo dough as a pastry - I bet this would work well for mini quiches. Cookinglight.com has really good recipes.

    I make crustess quiches. I use 1% milk and reduced fat cheeses. Canadian bacon is a good addition as well(instead of regular bacon). I also often use frozen chopped broccoli or spinach. Another way to cut cals/fat is to do a mix of whole eggs and egg whites. I buy a carton of just egg whites instead of having to crack eggs and deal with that mess.
