Light Chicken Pot Pie Recipe (has pic)

This chicken pot pie tastes rich and delicious, but it has a fraction of the calories typically found in the scrumptious dish!

Ingredients:

Approximately 20 ounces boneless, skinless chicken breasts, cooked and cubed
1 cup water
4 Tbls cornstarch
2 cups unsweetened almond milk
2 tsp chicken bouillon granules (or 2 bouillon cubes)
5 celery stalks, chopped
1/2 yellow onion, chopped
2 cups frozen vegetable blend (I use one with carrots, green beans, and corn)
1/4 tsp thyme
salt & pepper to taste
2 pie crusts (refrigerated store-bought or homemade)

Directions:

Combine cornstarch and 1/2 cup water; whisk until well blended. Set aside.

Add almond milk and 1/2 cup water to a large pot; slowly bring to boil. Watch out, it will boil over in the blink of an eye! Add celery, onion, frozen veggie mix, and chicken bouillon to pot, returning to boil. Reduce heat and simmer, covered, for 15 minutes. Add chicken and the cornstarch and water mix, stirring well. Add thyme, salt, and pepper, to taste. Return to boil, then reduce heat and simmer another 10 minutes.

Meanwhile, press pie crust into bottom of a deep 9" dish. Do not grease or prick.

Transfer filling from pot to dish. Gently center second pie crust on top of dish, using thumb and forefinger to press bottom and top crusts together. Prick top crust in a few places.

Cover outside edges of crust with foil to prevent burning.

Bake at 425* for 10-15 minutes, until crust is golden brown. Remove foil for last 3 minutes of baking.

Remove from oven, and let cool for 10-15 minutes prior to serving.

If made without the crust, this dish is gluten-free and much lower in calories! However, I feel that chicken pot pie just isn't the same without a yummy, flaky crust, so I include it in mine. :o)
